The Recipe How-To
Now that we have all the ingredients ready, it’s time to start making these chewy coffee cookies. Follow these simple steps and you’ll have a batch of perfectly baked cookies in no time!
Step 1: Prepare the Ingredients
First things first – let’s measure out our ingredients. In a medium-sized mixing bowl, whisk together 2 cups of cake flour, 1/2 tsp baking powder, 1/4 tsp baking soda, and 1/4 tsp salt. Set the dry mixture aside.
In another medium-sized mixing bowl, cream together 1 cup unsalted butter (at room temperature), 1 cup granulated sugar, and 1/2 cup brown sugar until well combined. Add in 1 egg, followed by 1 1/2 tsp vanilla extract and mix until smooth.
Step 2: Combine the Dry and Wet Mixtures
Gradually add in the dry mixture into the wet mixture, stirring until everything is well combined. Make sure not to overmix the dough!
Add in 2 tbsp instant coffee powder and continue stirring until it is incorporated evenly.
Step 3: Chill the Dough
The dough will be very soft at this point so don’t worry! Simply cover it with plastic wrap and refrigerate for at least an hour or up to overnight.
Step 4: Preheat Oven & Roll Dough into Balls
Preheat your oven to 375°F (190°C). Once the dough is chilled, use a cookie scoop or spoon to roll dough into tablespoon-sized balls.
Step 5: Bake the Cookies
Place the rolled cookie balls onto a lined baking sheet about 2 inches apart. Be sure to flatten each cookie slightly as the cookies will not spread very much during baking.
Bake for 12-15 minutes, or until edges are lightly golden brown. Let baked cookies cool on pan for about 5 minutes before transferring onto a wire rack to cool completely.
That’s it! Serve and enjoy your freshly baked coffee cookies with your favorite hot drink.

Serving and Pairing
A freshly baked batch of coffee cookies calls for a cup of rich, dark coffee. The perfect pair, both the cookies and the coffee complement each other’s flavors and aromas. Make sure to serve the cookies while they’re still slightly warm or at room temperature to get the best texture and flavor.
These chewy coffee-flavored cookies are delicious on their own, but you can also serve them with a variety of toppings and accompaniments. One classic pairing would be a scoop of vanilla ice cream, which adds creamy richness that balances out and enhances the bold coffee flavor of the cookies.
For a more decadent option, consider drizzling some melted dark chocolate over the top of the cookies or sandwiching them together with a layer of ganache made with espresso. These chocolate-coffee bean cookies can also be paired with some freshly brewed espresso or cappuccino for a luxurious after-dinner treat.
If you’re in the mood for something less sweet, try serving these coffee-inspired treats alongside a hearty bowl of oatmeal, or enjoy them as a crunchy accompaniment to your morning yogurt. You can even twist things up and use them as an ingredient in your own homemade tiramisu recipe.

Make-Ahead, Storing and Reheating
Planning to make these coffee cookies ahead of time or have some leftovers to store? With these tips, your cookies will taste freshly-baked even after staying in the pantry for a few days.
Make-Ahead
You can easily make the dough for these coffee cookies ahead of time and freeze them for later use. Preparing the cookie dough earlier can save you some precious time, especially if you’re baking for a big event or have a busy schedule. Before storing the dough in the freezer, wrap it tightly with plastic wrap and place it in an airtight container. When you’re ready to bake, move the container from the freezer to the fridge to thaw overnight before shaping and baking.
Storing
To keep your coffee cookies chewy and soft, store them in an air-tight container. You can also line the container with parchment paper or plastic wrap to keep them from sticking together. You can store them at room temperature, and they’ll stay fresh for up to five days. If you want to extend their shelf-life further, you can store them in the fridge for over a week or freeze them for up to three months.
Reheating
If you have leftover coffee cookies that have gone stale or want to reheat frozen ones, preheat your oven to 375°F (190°C) and reheat them on a baking sheet lined with parchment paper. Reheat for 2-3 minutes until they are heated through and get crispy around the edges. If you prefer microwaving instead, heat each cookie on high about 5-10 seconds; just remember that reheating cookies in the microwave won’t bring back their original texture like using an oven would.
With these tips on making-ahead, storing, and reheating your coffee cookies, you’ll enjoy every bit of its rich caffeine-infused flavor without having any go to waste.
Tips for Perfect Results
To achieve the best results with your coffee cookies recipe, there are a few tips and tricks that can help you along the way. These tips will guide you towards achieving perfectly chewy coffee-flavored cookies that are sure to impress.
Firstly, pay close attention to the measurements of each ingredient in the recipe. It is important to measure accurately, especially when it comes to combining the wet and dry ingredients. Too much flour or too little sugar can greatly affect the texture and taste of your cookies.
Next, make sure that your butter is at room temperature before starting. Softened butter is easy to mix with the sugar and other ingredients which creates a smooth dough. Using melted butter may change the texture of your cookies and will make them spread out, resulting in thin crispy edges and a denser center.
Using cake flour instead of all-purpose flour can also improve the texture of your coffee cookies. Cake flour has less protein content, which results in a lighter, more delicate texture. On the other hand, if you do not have cake flour at hand you can use all-purpose flour without compromising quality.
Another important tip is to chill your cookie dough for at least 30 minutes prior to baking them. Chilling helps prevent spreading during baking and allows flavors to meld together intensifying the taste of your cookies.
Lastly, keep an eye on your oven temperature and baking time as different ovens may vary in temperature consistency. The oven should be preheated to 375°F (190°C) before placing the cookie dough into bake mode.
Incorporate these tips in creating for a perfect batch of coffee-flavored cookies that are chewy, flavorful, and irresistible!
