- ¾ cup of granulated sugar
- 1 tablespoon of vanilla extract
- 3 tablespoons of instant coffee
- 2 tablespoons of vanilla syrup
- A pinch of salt
For this recipe, I recommend using high-quality ingredients to get the best flavor and texture possible. You can also use low-fat ingredients such as skim milk or half and half for a lighter version, but keep in mind that it may affect the overall taste and consistency.
Feel free to experiment with different coffee beans or syrups to customize your ice cream. And if you’re looking for a keto-friendly option, you can replace the sugar with a low-carb sweetener and use heavy cream instead of milk.
Note: If you don’t have an ice cream maker, you can still make this recipe by freezing the mixture in an airtight container and stirring it regularly until it reaches a smooth consistency.
The Recipe How-To
Now comes the fun part – creating your delicious Vanilla Latte Ice Cream! Gather all the ingredients you will need and make sure you have a large container or freezer-safe dish ready to go.
Ingredients:
- 2 cups of heavy cream
- 1 cup of whole milk
- ½ cup of granulated sugar
- 2 tablespoons of instant coffee
- 2 teaspoons of vanilla extract
- 1 tablespoon of vanilla syrup
Directions:
-
In a medium saucepan over low heat, combine the heavy cream, milk, sugar, and instant coffee. Whisk together gently and heat until hot but not boiling.
-
Once hot, remove from the heat and whisk in the vanilla extract and vanilla syrup until completely combined.
-
Allow the mixture to cool completely before pouring it into your ice cream maker. Follow the manufacturer’s instructions to churn the ice cream for around 20-25 minutes or until it is thick and creamy.
-
Transfer the ice cream to your freezer-safe container and let it freeze for at least two hours, or until it has hardened up enough to scoop.
-
Serve your Vanilla Latte Ice Cream with a dollop of whipped cream on top, a dusting of cocoa powder or even some caramel sauce for an extra indulgent treat.
Pro tip: For an extra strong coffee flavor, try brewing a shot or two of espresso and stirring that in with the other ingredients before cooling.
Note: If you don’t have an ice cream maker, don’t worry! Simply follow steps 1–3, then pour the mixture into a freezer-safe dish and freeze for about an hour. After an hour, take out the ice cream and give it a good mix with a hand mixer or blender to break up any ice crystals that may have formed. Put it back in the freezer and repeat this process every thirty minutes until it reaches your desired consistency.
Substitutions and Variations
Are you looking for ways to customize this vanilla latte ice cream recipe to your liking? Here are some substitutions and variations you can try:
– Low-Carb Option: If you’re watching your carbohydrate intake, you can replace the sugar in the recipe with low-carb sweeteners like stevia, erythritol, or monk fruit. You can also skip the vanilla syrup altogether and use a few drops of vanilla extract instead.
– Coffee Flavors: Don’t limit yourself to just vanilla! Experiment with different coffee flavors like mocha, caramel macchiato, hazelnut, or even pumpkin spice. Use flavored syrups, extracts, or instant coffee to achieve your desired flavor.
– Dairy-Free Option: If you’re lactose intolerant or prefer non-dairy options, you can swap out the milk and heavy cream in the recipe with almond milk, soy milk, coconut milk, or oat milk. Just make sure to choose unsweetened versions so as not to overpower the vanilla flavor.
– Homemade Coffee: Instead of using instant coffee powder, you can brew a fresh pot of coffee and let it cool before adding it to the ice cream mixture. This will give your ice cream a richer and more authentic coffee flavor.
– Toppings: Get creative with your toppings! Add whipped cream, chocolate chips, crushed cookies, chopped nuts, or even a drizzle of caramel sauce on top of your vanilla latte ice cream for extra flavor and texture.
Don’t be afraid to experiment and try new things with this recipe – after all, that’s how some of the best creations are made!

Make-Ahead, Storing and Reheating
When it comes to ice cream, there’s no denying that it’s best when it’s freshly churned. However, with a little bit of planning and preparation, you can still enjoy the smooth and creamy goodness of this vanilla latte ice cream long after you’ve made it.
To make ahead, simply follow the recipe instructions and let the ice cream mixture cool completely before transferring it to an airtight container. Pop it in the freezer until ready to use. The ice cream will keep in the freezer for up to two weeks, but be sure to cover any exposed surface with plastic wrap or parchment paper before sealing the container fully.
To reheat or soften your ice cream once it’s been stored, take it out of the freezer and let it sit on the counter for a few minutes until it’s soft enough to scoop. If you’re short on time, you can also microwave scoops of ice cream for 10-15 seconds at a time until softened.
It’s important to note that while storing and reheating homemade ice cream isn’t quite as simple as grabbing a carton from your local grocery store, the extra effort is definitely worth it for the pure and natural flavors that come through in each bite. Plus, having a batch of homemade vanilla latte ice cream on hand is an excellent way to impress any last-minute guests or satisfy your sweet tooth late into the night.
Tips for Perfect Results
Making Vanilla Latte Ice Cream may sound easy, but there are tips to help you achieve the perfect consistency and flavor. Here are some helpful recommendations for making your homemade vanilla latte ice cream recipe that will have your taste buds singing.
First and foremost, use high-quality ingredients. Invest in good vanilla beans or vanilla extract, fresh milk and heavy cream. The quality of ingredients you choose will greatly impact the flavor of your ice cream.
When it comes to making vanilla syrup, remember to add sugar gradually until it reaches the desired sweetness. Adding too much sugar can make it too sweet, masking the natural flavors in coffee and vanilla.
To maintain smooth texture, avoid adding too much coffee instant or ground coffee beans as they can make the ice cream grainy. A proper ratio is two tablespoons of instant coffee per two cups of hot water.
Don’t forget that heavy cream has a higher fat content than regular cream and will produce a denser ice cream, whereas using regular milk will result in a lighter texture.
Another tip to ensure perfect results is to make sure that all ingredients are chilled before combining them. It helps the mixture churn faster and improve the ice cream’s texture.
Be patient when churning ice cream, especially if you’re using an electric machine. Excessive churning can create ice crystals rather than the creamy texture we want.
Finally, always freeze leftover vanilla latte ice cream in an airtight container to prevent it from absorbing unwanted flavors or developing freezer burn.
By following these tips carefully, you can be confident that your homemade vanilla latte ice cream will be a success every time!
