Now, let’s dive into the most important part of this article: The Recipe How-To. Follow along these simple steps to make your own batch of delicious and fluffy coffee cakes.

Ingredients:

  • 1 and ½ cups cake flour
  • 1 teaspoon baking powder
  • ⅛ teaspoon baking soda
  • ⅛ teaspoon salt
  • 2/3 cup granulated sugar
  • 1 large egg
  • 4 tablespoons unsalted butter, softened
  • ½ cup sour cream or Greek yogurt
  • 2 tablespoons whole milk

Instructions:

  1. Preheat the oven to 350°F (177°C). Spray a muffin pan or mini bundt pan with non-stick spray. Set aside.
  2. In a medium bowl, whisk together cake flour, baking powder, baking soda and salt.
  3. In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, beat butter on high speed until creamy, then add the sugar and beat until light in color and well mixed.
  4. Add the egg and vanilla extract, then beat on medium speed just until combined.
  5. Gradually mix in the dry ingredients until just combined.
  6. Add the sour cream or Greek yogurt and milk and mix on low speed until smooth and uniform; don’t overmix.
  7. Spoon about ¼ cup of batter into each muffin cavity, filling each cavity about 2/3 full.
  8. In a small bowl, mix together chopped pecans, cinnamon, and sugar (about 2 tablespoons total). Sprinkle about 1 teaspoon of this mixture over the batter in each muffin cavity.
  9. Top each muffin cavity with another spoonful of batter so that the pecan mixture is sandwiched between two layers of batter – this will give the coffee cakes an attractive swirled look when you bite into them.
  10. Bake for 20 –25 minutes or until completely baked through – depending upon your oven temperature setting.
  11. Cool in pan for a few minutes. Then remove cakes from the pan.

Note: If you choose to make mini loaves instead of individual coffee cakes in a muffin tin,you can increase baking time to around 30-35 minutes.

Enjoy your freshly baked individual coffee cakes with your favorite drink!

Substitutions and Variations

Perfectly cozy for a lazy morning breakfast.
Perfectly cozy for a lazy morning breakfast.

When it comes to coffee cakes, there’s no shortage of creative substitutions and variations you can play with to create your own signature flavors.

Looking for a nuttier variation? Substitute pecans or walnuts for the cinnamon sugar filling in this recipe. You can even add a little caramel drizzle on top to really take it over the edge.

If you’re not a fan of cinnamon, try adding blueberries instead. Blueberry coffee cake muffins are a classic dish that will never disappoint. And if you want to take it up another notch, Mary Berry has a fantastic recipe for blueberry cake muffins with cream cheese frosting.

For those who are health-conscious, try substituting half of the all-purpose flour with whole wheat or oat flour. It will give the cake a nuttier flavor and make it more fiber-rich.

Gluten-free eaters can also enjoy this recipe by using gluten-free flour instead of all-purpose. And for vegans, substitute eggs with an egg substitute and use coconut oil instead of butter.

Finally, if you want to change up your shape game, try baking them as mini bundt cakes or mini loaf cakes. They are perfect for parties and gift giving.

The possibilities are endless when it comes to coffee cakes, so don’t be afraid to experiment and find your favorite flavors!

Serving and Pairing

Who needs a whole cake when you can have a personal coffee cake?
Who needs a whole cake when you can have a personal coffee cake?

These individual coffee cakes are best served warm, straight out of the oven. They are perfect for a cozy breakfast or brunch treat. I recommend pairing them with a hot cup of coffee, cappuccino or latte. The rich and bold flavors of coffee complement the spicy and nutty flavors of the coffee cake.

For a fancier presentation, you can serve these mini coffee cakes on a decorative platter dusted with powdered sugar and garnished with fresh berries. They also go well with a dollop of whipped cream or a drizzle of caramel sauce.

If you’re hosting a brunch or tea party, these mini coffee cakes make great additions to your dessert spread. You can also serve them as an afternoon snack on their own or pair them with your favorite tea blend.

For a creative twist, you can also try making blueberry coffee cakes by adding fresh or frozen blueberries to the batter. The tartness of blueberries complements the sweetness of this recipe nicely, creating an unforgettable flavor combination.

In summary, these mini coffee cakes are versatile and pairs well with various hot beverages and toppings. Whether you’re serving them for breakfast, brunch or afternoon tea, they’re sure to impress your guests with their fluffy texture and delicious aroma!

Make-Ahead, Storing and Reheating

When it comes to make-ahead options, these individual coffee cakes are perfect for preparing ahead of time. You can easily make a few batches in advance and store them in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator. Just be sure they have completely cooled down before storing.

If you want to freeze them for future use, wrap each cake tightly in plastic wrap and place them in a freezer-safe bag. They can be frozen for up to 2 months. When you are ready to serve them, allow them to thaw at room temperature and give them a quick refresh in the microwave or oven.

If you have leftover cakes that you would like to reheat, simply pop them in the oven at 350°F (180°C) for about 5-7 minutes or until they are warmed through. Make sure not to overheat them as they can dry out quickly.

One tip I have is to cut the cakes before reheating if needed. These mini coffee cakes are perfectly portioned, but if you find yourself wanting only half of one, this will make it easier to reheat only what you want.

Overall, these individual coffee cakes are an excellent option for preparing ahead of time or enjoying as leftovers later on. They have good keeping power and can be heated up easily adding that fresh out of the oven taste every time you eat one.

Tips for Perfect Results

To ensure perfect results for your individual coffee cakes, here are my top tips:

First, make sure all ingredients are at room temperature before you start baking. This helps in evenly mixing the ingredients and ensures the cakes rise properly.

Second, use cake flour instead of all-purpose flour for a tender crumb. Cake flour has less protein compared to all-purpose flour which makes it suitable for delicate cakes such as this one.

Third, do not overmix the batter. Overmixing can cause the cakes to be dense and tough. Mix just until everything is incorporated and stop there.

Fourth, do not overbake the cakes. Check them a few minutes before the exact baking time, and if they are golden on top and an inserted toothpick comes out clean, they are done. The toothpick should have moist crumbs attached but not be coated with wet batter.

Fifth, let the cakes cool completely before glazing or dusting with powdered sugar. If you add icing while they’re still warm, it’ll melt and seep into the cake.

Sixth, feel free to experiment with different flavors and toppings like blueberries, walnuts, caramel or sponge cake mix.

Seventh, when making substitutions or variations to this recipe, keep in mind that baking is a science and small alterations could result in significant changes.

Lastly, keep an eye out for consistency when mixing ingredients together; you want a smooth texture without lumps. Remember: baking is flexible! Don’t hesitate to use your own intuition and creativity in order to make this recipe uniquely yours.

Bottom Line

If you’re a coffee and cake lover, this individual coffee cakes recipe is a must-try! Perfect for any occasion or anytime you crave something sweet with your cup of joe. With its warm cinnamon flavor, crunchy pecans, and moist texture, these mini coffee cakes are sure to win your heart over.

Not only the recipe is easy to follow and requires only common ingredients, but it also allows for substitutions and variations. This means that you can get creative and tailor the recipe to your taste preferences or available ingredients.
