The Recipe How-To

Once you have gathered all the ingredients, it’s time to start baking.

Step 1: Make the Streusel Topping

In a small bowl, combine 1/4 cup of sugar, 1/4 cup of flour and 2 tbsp of butter. Mix well with a fork until the mixture becomes crumbly.

Step 2: Make the Cheesecake Filling

Using an electric mixer, beat 8 oz of cream cheese until it becomes smooth. Gradually add in 1/4 cup of sugar and beat again. Add in one egg and beat until just combined. Finally, mix in 1 tbsp of lemon juice and set aside.

Step 3: Make the Coffee Cake Batter

In a separate bowl, whisk together 2 cups of flour, 2 tsp of baking powder, 1/2 tsp of baking soda and 1/4 tsp of salt.

In another bowl or a stand mixer, beat 1/2 cup of butter until it becomes light and fluffy. Gradually add in 1 cup of sugar and continue beating for two minutes.

Next, add in two eggs, one at a time, making sure each egg is fully incorporated into the mixture before adding the next one.

Add in 1 cup of sour cream and mix well. Carefully fold in the flour mixture until just combined.

Step 4: Assemble the Cake

Preheat your oven to 350°F (180°C). Grease a 9-10 inch springform pan with cooking spray or butter.

Spread half of the coffee cake batter evenly in the bottom of the pan.

Pour your cheesecake filling over the top of the batter, spreading it out so that it coats the entire surface.

Sprinkle fresh or frozen raspberries over the cheesecake filling then cover with remaining cake batter.

Lastly, crumble your streusel topping over everything in an even layer.

Bake your raspberry double cream coffee cake for around 60-65 minutes or until lightly golden brown on top and a toothpick in center comes out clean.

Step 5: Serve and Enjoy

Allow your raspberry double cream coffee cake to cool for about half an hour before removing from the pan. Slice it up into pieces big enough for you and any friends who might want to try this delectable raspberry cream cheese coffee cake recipe too!

Substitutions and Variations

If you’re feeling adventurous and want to customize this recipe to suit your preferences, here are some substitutions and variations to consider.

– Fruit swaps: If raspberries aren’t your thing, you can easily swap them out for other fruits like blueberries, strawberries or blackberries. You could also get creative and try a lemon raspberry double cream cake or a chocolate raspberry coffee cake.

– Cream cheese alternatives: If you’re not a fan of cream cheese or are looking for a lighter alternative, you could replace it with mascarpone cheese or ricotta cheese. Alternatively, you could add a touch of Greek yogurt to the mixture for some extra tang.

– Gluten-free options: For those who are gluten intolerant, you can still enjoy this coffee cake by using gluten-free flour instead of regular all-purpose flour. Just make sure that the baking powder and baking soda used in the recipe is also gluten-free.

– Low carb and keto-friendly: If you’re following a low carb or keto diet, you can still indulge in this heavenly dessert by swapping out the sugar for a low-carb sweetener such as erythritol or stevia. You could also switch out the all-purpose flour with almond flour and coconut flour for added nutritional benefits.

– Streusel variations: The streusel topping is what really makes this coffee cake sing. To switch things up, you could add chopped nuts like almonds or walnuts to the mixture, along with cinnamon or nutmeg for added warmth and flavor.

No matter what substitutions or variations you choose, remember to follow the basic instructions of the recipe closely, as varying too many ingredients can cause undesirable results. With these variations in mind, let your imagination run wild and create your own unique take on this delicious raspberry double cream coffee cake.

Serving and Pairing

As a barista, one of the most satisfying things about the Raspberry Double Cream Coffee Cake recipe is pairing it with a delicious cup of coffee. Because this cake is moist, buttery and creamy, it goes perfectly well with any type of coffee. I recommend pairing it with a medium roast coffee that has a medium acidity level as it complements the cream cheese and raspberry flavors well without overpowering them.

When it comes to serving, this cake can be enjoyed any time of the day. Slices can be served as breakfast, brunch or dessert. It goes great with a dollop of whipped cream and garnished with fresh raspberries or sprinkled with powdered sugar for added sweetness.

One serving suggestion is to cut the cake into small squares and serve with a side of fresh berries or raspberry jam. This gives your guests an opportunity to mix and match different flavors and create their personalized experience. Another suggestion is to warm up leftover slices in the microwave briefly and enjoy it paired with a cold glass of milk for a comforting indulgence.

In summary, this Raspberry Double Cream Coffee Cake recipe is versatile in serving and pairing options. It can be served anytime, anywhere, whether it’s paired with morning coffee or enjoyed as an after-dinner treat. Tips for Perfect Results

As a barista, I have learned a few tricks to perfecting the Raspberry Double Cream Coffee Cake recipe. Here are some tips to help you make the best coffee cake every time:

1. Soften the cream cheese and butter before using them in the recipe to ensure they blend smoothly and evenly.

2. Make sure all ingredients are at room temperature before beginning. This helps everything mix together seamlessly.

3. Use fresh and high-quality ingredients for the best taste. Raspberries are a centerpiece in this recipe, so use fresh or frozen raspberries instead of canned ones for that burst of flavor.

4. Do not overmix after adding in the flour mixture or the cake will become tough and chewy. Mix only until just combined for a moist, buttery cake.

5. Line the bottom of your springform pan with parchment paper to easily remove the coffee cake from the pan.

6. When making the streusel topping, be sure to use cold butter, and use your fingertips to mix it into the flour mixture until it resembles coarse sand.

7. If you don’t have sour cream on hand, plain Greek yogurt can be used as a substitute for a tangy twist.

8. Try adding a squeeze of lemon juice to the raspberry cream cheese filling to brighten up the flavors even more.

By following these tips, you’ll end up with a coffee cake that’s as moist and delicious as it is impressive-looking. Happy baking!
